Ingredient Weight Method
Zucchini (Peeled) 500g Peel the zucchini completely (to ensure a white "potato" look). Chop into 2cm chunks.
Garlic Cloves 2 pcs Steam the zucchini and garlic until very soft (about 8–10 mins).
Almond Milk 30g Drain the zucchini in a colander for 2 mins. Do not skip this; you want to remove the excess "vegetal" water.
Lemon Juice 10g Transfer to the Magimix 4200XL with the S-blade. Add the almond milk, lemon juice, salt and plenty of black pepper.
Xanthan Gum 0.5g Process on high. While running, dust in the xanthan gum. This emulsifies the remaining water and fiber into a glossy, thick "Silk."
Salt 5g
Black Pepper to taste
You can add nutritional yeast to taste here to make it a (sort of...) cheesy mash that you don't have to think twice about having three helpings of.
